After an introduction about the state of the art of milling industry, the author reviews the history and evolution of flour waterwheel technology in Spain, especially those in the region of the Sierra Sur in Jaén. Finally, he carries out an exhaustive historical and technological research of an abandoned waterwheel in this region.
